However, in order to preserve all the valuable nutritional properties of this oil, it is best to use it unheated: pour it on salads, into soups, porridges and other already prepared food.
We never mix olive oils from various harvest periods: each period has its own characteristics and attributes which we want to preserve in every vintage.
